If the wine has been stored at cellar temperature (cool but not cold), remove 10–15 minutes before serving. Using a waiter’s corkscrew, cut the foil cleanly below the lip, then remove the cork slowly to avoid agitation.

Finca Ygay Reserva 2020 can benefit from decanting. Pour the wine slowly into a decanter in one steady stream, watching for any sediment. Decant for 45–90 minutes before serving to allow aromas and flavors to open. If short on time, swirl the glass gently to introduce air and serve immediately; the wine will continue to open in the glass.

Decanting

Use large-bowled red wine glasses to concentrate the wine’s aromatics. Serve at 16–18°C (61–64°F). If the wine is a few degrees warmer than ideal, place it briefly (5–8 minutes) in the refrigerator; if too cold, let it sit in the glass for a few minutes to warm to the proper range.

Serving temperature & glassware

Place one large red wine glass for each guest. If using a decanter, set it on the table or a side surface so guests can observe the wine’s color and clarity as it is poured.

Pour a small tasting measure (about 30–60 ml) into each glass for the first sniff and taste; then fill glasses to roughly one-third full to allow space for swirling and aroma concentration.

Mushrooms & vegetarian: Toss mushrooms with olive oil, salt and pepper and grill or roast at 220°C (430°F) for 12–15 minutes until browned; serve warm alongside the wine to highlight its earthy and savory notes.
