House Spiced Syrup (make ahead — yields ~10 oz)

Combine and simmer

In a small saucepan combine 1 cup sugar and 1 cup water. Add cloves, allspice berries, cinnamon stick, and sliced ginger. If using a split vanilla bean, add the seed and pod; if using extract, add it later off heat.

Heat and steep

Bring mixture to a gentle simmer over medium heat, stirring until sugar dissolves. Lower heat and simmer 5 minutes to extract flavors. Remove from heat and let steep 20–30 minutes for deeper spice.

Strain and finish

Strain syrup through a fine-mesh sieve, pressing solids to extract liquid. If using vanilla extract, stir it in now. Cool to room temperature, then refrigerate in a sealed container up to 2 weeks.

Cocktail — Fire on the Mountain (single serving)

Prepare glass

If using crushed-ice presentation, fill a tall Collins or tiki glass with crushed ice. If using a large ice cube, place the single large cube in a rocks glass and set aside.

Build the drink

In a shaker filled halfway with ice combine 2 oz dark rum, 0.75 oz fresh lime juice, 0.75 oz fresh orange juice, 1 oz pineapple juice, 0.5 oz house spiced syrup, 0.25 oz grenadine, and 2 dashes Angostura bitters.

Shake

Shake vigorously for 10–12 seconds until the shaker is well-chilled (ice-cold to the exterior) and slightly frothy from citrus.

Strain and assemble

If using a Collins or tiki glass filled with crushed ice, double-strain the cocktail over the crushed ice to fill the glass. If using the large-ice-cube presentation, strain over the single cube and then top with a small amount of crushed ice around it if desired.

Float overproof rum (optional)

Carefully pour 0.5 oz overproof rum over the back of a spoon held just above the drink surface to create a float. This increases the 'fire' character and aroma.

Garnish and finish

Garnish with a mint sprig and a lime wheel on the rim. Lightly grate a dusting of fresh nutmeg or cinnamon over the top if desired. If you floated overproof rum, warn guests and do not light the drink—the float is for aroma and visual effect only.

Serve immediately with a straw and a long spoon for crushed-ice versions. Sip and enjoy the layered tropical-spice profile.
