Base Soup (serves 4)
Add stock and simmer
Pour in 6 cups stock, add salt and pepper. Increase heat to bring to a gentle boil, then reduce to a simmer. If using potato (1 cup), add now. Simmer uncovered until potatoes are tender, about 10–12 minutes.
Vegetable Add-ins
Protein Add-ins (choose one or combine)
If using cooked shredded chicken (2 cups), add to the pot after vegetables are tender and heat through 3–5 minutes. If using canned beans (1 cup), stir in with chicken or on its own and simmer 2–3 minutes to warm. If using tofu (8 oz), add cubed tofu gently and simmer 2–3 minutes to heat.
Grain/Pasta Add-ins (optional)
If adding small pasta or rice (3 oz uncooked), bring soup back to a gentle boil and add pasta/rice; cook according to package directions (typically 7–12 minutes for small pasta, 12–18 minutes for rice) until tender. If using orzo or barley (1 cup), adjust cooking time: orzo ~8–10 minutes, pearled barley 20–30 minutes. If you plan to keep leftovers, slightly undercook the grain by 1–2 minutes to avoid excessive absorption when stored.
Finishing & Garnish
Remove and discard the bay leaf. Taste and adjust seasoning with additional salt and pepper as needed. Stir in 1 tablespoon lemon juice and 2 tablespoons chopped fresh parsley. Ladle soup into bowls and garnish with grated Parmesan and a pinch of red pepper flakes if desired.
Make-Ahead & Variations
This base is intentionally flexible: swap stocks, use different vegetables, or add different proteins. For make-ahead, store soup (without dairy garnish) in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove and add fresh parsley and lemon juice just before serving.
