Main Protein (Chef’s Choice Fish or Seafood)
Prepare and Season Protein
Pat the fish or seafood dry with paper towels. Season both sides with kosher salt (1 tsp per lb) and freshly ground black pepper (½ tsp per lb). Drizzle or rub with 2 tbs olive oil and let sit at room temperature for 10 minutes while you preheat pans and prepare accompaniments.
Cook Protein
Heat a large nonstick or stainless-steel skillet over medium-high heat until hot. Add 1 tbs olive oil (from main protein portion if reserved) and swirl. For fish fillets: place skin-side down if applicable and cook 3–5 minutes without moving, until skin is crisp and the underside is golden. Flip and cook an additional 2–4 minutes until opaque and the internal temperature reaches 125–135°F (52–57°C) depending on fish type. For scallops: pat very dry, sear 1.5–2 minutes per side until deep golden and just opaque. For shrimp: cook 1–2 minutes per side until pink and opaque. Remove protein to a warm plate and cover loosely with foil while you finish sauce and sides.
Finish with Lemon
Immediately before serving, squeeze half a lemon over the cooked protein to brighten flavor.
Seasonal Accompaniment — Pan-Roasted Spring Vegetables
While protein rests, in a separate skillet heat 1 tbs olive oil and 1 tbs unsalted butter over medium-high heat until butter foams. Add trimmed asparagus or seasonal vegetables and toss to coat. Season with ½ tsp salt and ¼ tsp black pepper. Sauté, stirring occasionally, 4–6 minutes until vegetables are tender-crisp and lightly caramelized. Add minced garlic and 1 tsp fresh thyme leaves in the last 30–45 seconds; cook until fragrant. Transfer to a warm serving dish and keep warm.
Starch — Herbed New Potatoes
While vegetables cook, place halved new potatoes in a medium saucepan and cover with cold water. Add a pinch of salt and bring to a simmer. Cook 10–12 minutes until just tender when pierced with a fork. Drain well and return to the pot. Add 1 tbs olive oil, 1 tsp chopped rosemary or dill, ¾ tsp salt and ¼ tsp black pepper. Gently toss to coat and brown the cut surfaces briefly in a hot skillet 2–3 minutes if desired for additional color. Keep warm until plating.
Finishing Sauce — Lemon Beurre Blanc (Quick)
In a small saucepan over medium heat, combine ¼ cup dry white wine (or fish stock) and 1 tbs finely minced shallot. Reduce to about 2–3 tablespoons (a concentrated, slightly syrupy reduction), about 3–4 minutes. Reduce heat to low, then whisk in 2 tbs cold cubed butter at a time until incorporated, followed by the remaining butter, keeping the sauce warm but not boiling. Whisk in 2 tbs fresh lemon juice. Season with ¼ tsp salt and 1/8 tsp white or black pepper. Taste and adjust acidity or salt. Strain if you prefer a silky finish. Keep warm.
To serve, spoon warm beurre blanc over the rested protein (about 2–3 tbs per portion) or serve alongside for guests to add at will.
Plating & Garnish
On each plate, place a portion of herbed new potatoes, arrange the pan-roasted seasonal vegetables beside them, and set the rested fish or seafood on top or slightly overlapping the vegetables. Spoon 2–3 tbs of warm lemon beurre blanc over the protein. Garnish with 2 tbs microgreens or chopped parsley and a lemon wedge. Serve immediately.
