Cocktail

1

Prepare glass

If serving on the rocks, place 3 fresh ice cubes into an old-fashioned glass and set aside. If serving up, chill a coupe or martini glass in the freezer for several minutes.

2

Dry shake (if using egg white)

In a cocktail shaker, combine 0.5 oz egg white, 2 oz gin, 0.5 oz green Chartreuse, 0.75 oz fresh lime juice, 0.5 oz simple syrup, 0.25 oz elderflower liqueur (if using), and 2 dashes Angostura bitters. Seal the shaker and shake vigorously without ice for 15–20 seconds to emulsify and build a creamy texture.

3

Wet shake

Open the shaker, add 6 ice cubes, re-seal, and shake hard for 12–18 seconds until the exterior of the shaker is very cold (this chills and dilutes the drink to balance flavor). If not using egg white, skip the dry shake and perform only this wet shake step with all liquid ingredients and ice.

4

Strain and serve

If serving up: double-strain the cocktail through a fine-mesh strainer into the chilled coupe or martini glass to remove ice shards and any egg white solids. If serving on the rocks: strain the cocktail over the prepared old-fashioned glass with fresh ice cubes.

5

Garnish and finish

Express a lime peel over the surface or place a lime wheel on the rim. Optionally add a tiny dash of Angostura on the foam (if egg white used) for aroma and visual contrast. Serve immediately.
