Prep
Measure and prepare all spices in a small bowl so they are ready to add: combine kosher salt, black pepper, paprika, ground cumin, dried oregano, chili powder, and brown sugar. Finely chop the onion and mince the garlic.
Heat pan
Place a large skillet over medium-high heat. Add 1 tablespoon olive oil and let it warm until shimmering but not smoking (about 30–45 seconds).
Brown the beef
Add the ground beef to the pan, breaking it into large pieces with a spatula. Spread it into an even layer and let it sit undisturbed for 1–2 minutes to develop some browning, then continue to break and stir until mostly browned, about 4–6 more minutes.
Deglaze and simmer
Pour in 1 tablespoon beef broth or water and 1 tablespoon Worcestershire sauce. Scrape the bottom of the pan to release any browned bits (deglazing). Reduce heat to medium-low and simmer for 2–3 minutes to allow flavors to meld and liquid to reduce slightly.
Check seasoning
Taste a small amount and adjust seasoning as needed: add up to 1/4 teaspoon more salt or pepper, or a pinch more brown sugar or chili powder to balance flavors.
Finish and garnish
Remove from heat. If desired, stir in chopped fresh parsley for brightness. Let rest for 2 minutes before serving.
