Salt the glass rim

Pour the salt onto a small plate. Rub the lime wedge around the outer rim of a rocks or coupe glass to moisten, then dip the rim into the salt so it adheres evenly. Set the glass aside.

Mixing

Add 2 oz Jose Tradicional Blanco, 0.75 oz triple sec, 0.5 oz agave nectar, 1 oz house sour mix, 2 oz fresh pineapple juice, and 0.25 oz fresh lime juice into a cocktail shaker.

Fill the shaker with ice (about 1 cup) to chill and slightly dilute the drink for balance.

Secure the shaker lid and shake vigorously for 12–15 seconds until the outside of the shaker feels very cold and a slight frost appears.

Strain the cocktail through a fine strainer (or the shaker strainer) into the prepared salted-rim glass over fresh ice if using a rocks glass, or neat into the chilled coupe.

Garnish

Thread a pineapple wedge or tuck a pineapple leaf on the glass rim or place it on top of the ice. If desired, express (twist) a small lime wedge over the drink and drop it in.

Service & notes

Serve immediately. Adjust sweetness or acidity to taste: add 0.25 oz more agave for sweeter, or 0.25 oz more lime or sour mix for brighter acidity. Use fresh pineapple juice for best flavor; canned is acceptable but reduce added sweetener if very sweet.
