Prepare glass

If you prefer a salted rim, rub the lime wedge around the outer rim of a highball or Collins glass. Spread the coarse salt on a small plate and dip the rim into the salt to coat. Fill the glass with ice and set aside.

Mix base

In a cocktail shaker (or mixing glass) combine 2 oz blanco tequila, 3 oz fresh grapefruit juice, 0.5 oz fresh lime juice, and 0.5 tbsp agave nectar. Add a small handful of ice to the shaker.

Shake

Shake vigorously for about 10–12 seconds until the outside of the shaker feels cold and slightly frosty. Shaking chills and dilutes the mixture and helps incorporate the agave.

Strain and top

Strain the shaken mixture into the prepared iced glass. Top with approximately 2 oz club soda (adjust to taste) and gently stir once or twice to combine.

Garnish and serve

Garnish with a grapefruit wedge or wheel and the remaining lime wedge. Serve immediately with a cocktail straw if desired.

Notes & adjustments

For a slightly sweeter Paloma, increase agave nectar to 1 tsp (0.33 tbsp). For more effervescence, add extra club soda. If using bottled grapefruit soda instead of fresh juice and soda, omit the club soda and reduce agave to taste (begin with 0.25 tbsp).
