Optional salted rim
If you prefer a salted rim, rub a lime wedge around the outer edge of a chilled old-fashioned or rocks glass, then dip the rim into a small plate with the coarse sea salt to lightly coat. Set the glass aside.
Build & mix
Add the reposado tequila, añejo tequila, fresh lime juice, fresh grapefruit juice, agave syrup, Yellow Chartreuse, and orange bitters into a cocktail shaker.
Add ice and shake
Fill the shaker with ice (about 1 cup) and shake vigorously for 12–15 seconds until the exterior of the shaker is well chilled and slightly frosted. This both chills and dilutes the drink to the correct balance.
Strain
Double-strain the cocktail (use both the shaker strainer and a fine mesh strainer) into the prepared rocks glass over one large ice cube or fresh ice, depending on preference.
Finish
Express the oils from the grapefruit twist over the surface of the drink by holding it with the peel facing down and giving a firm squeeze, then rub the peel around the rim if desired and drop it into the glass (or float the grapefruit wheel).
Serve
Serve immediately. The Pacifico is best enjoyed chilled and slightly diluted; the Yellow Chartreuse adds an herbal sweetness that complements the tequilas and grapefruit.
