Cocktail

Method

Prep the glass

1

Salt rim

Take a coupe or rocks glass and run the lime wedge around the outer rim of the glass (or the entire lip, depending on style). Spread the coarse salt on a small plate. Dip the wet rim into the salt and gently twist to coat evenly. Set the glass aside.

Mix the drink

2

Add ice to a cocktail shaker until roughly 2/3 full (about 1 cup).

3

Pour 2 oz Seedlip Notas de Agave into the shaker.

4

Add 1 oz house sour mix. (If making house sour: combine 1 part fresh lime juice, 1 part fresh lemon juice and 1 part simple syrup; strained and chilled.)

5

Add 0.5 oz fresh lime juice for brightness and 0.5 oz orange cordial (or nonalcoholic orange liqueur substitute) for the orange note typical in a margarita.

6

Add 0.25 oz agave syrup to round and balance acidity; adjust to taste if you prefer sweeter.

7

Cap the shaker and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and properly diluted.

8

Fill the prepared glass with fresh ice if serving on the rocks (or leave empty for upserved coupe style). Strain the cocktail through a fine strainer into the glass.

Finish & Serve

9

Garnish with a lime wheel on the rim or floated in the drink. Optionally express a lime peel over the top for aromatic oils.

10

Serve immediately. Recommend tasting and adjusting: add 0.25 oz more agave if too tart, or 0.25 oz more sour mix if it needs more brightness.
