Prepare glass
Chill a coupe or rocks glass by filling it with ice water while you build the drink, or place it in the freezer for a few minutes.
Juice citrus
Roll the grapefruit and lime on the countertop firmly with your palm to loosen juices. Cut and juice enough grapefruit to yield 1 oz (about 2–3 tablespoons) and a lime to yield 0.5 oz. Strain if you prefer a smoother texture.
Combine ingredients
In a cocktail shaker, add 2 oz Seedlip Spice 94, 1 oz fresh grapefruit juice, 0.5 oz fresh lime juice, and 0.5 oz agave nectar. Add a handful of ice (about 4–6 large cubes).
Shake
Secure the shaker and shake vigorously for 12–15 seconds until the outside of the shaker is well chilled and diluted.
Strain and serve
Dump the ice water from your chilled glass. Double-strain the cocktail into the chilled coupe or over fresh ice in a rocks glass using a Hawthorne and fine mesh strainer to remove pulp and small ice shards. If serving on the rocks, add 3–4 large cubes.
Garnish
Express the oils of a grapefruit twist over the drink by holding the twist skin-side down about 3 inches above the surface and giving it a quick bend; then rub the rim with the twist and drop it into the glass or place a thin grapefruit wheel on the rim.
Serve
Serve immediately. Taste and adjust sweetness if necessary: add 0.25 oz more agave nectar if you prefer sweeter, or a few drops of lime if you prefer brighter acidity.
