Chill glass

Place a highball or Collins glass in the freezer for 5–10 minutes to chill, or fill it with ice while you prepare the drink.

Rim (optional)

If you want a salted or sugared rim, rub the lime wedge around the glass lip, then dip the rim into the coarse salt or sugar spread on a small plate. Set the glass aside.

Build the High Noon

Fill a cocktail shaker halfway with ice.

Add the vodka, fresh grapefruit juice, fresh lime juice, and simple syrup to the shaker.

Add 2 dashes of Angostura bitters to the shaker. This adds aromatic depth and a slight spice note that balances the citrus.

Shake vigorously for 10–12 seconds, until the shaker is cold to the touch and the mixture is well aerated.

Remove the chilled glass from the freezer or discard ice used to chill. Fill the glass with fresh ice (large cubes or crushed, about 1 cup).

Strain the shaken mixture into the prepared glass over the ice using a fine or Hawthorne strainer.

Top gently with club soda or sparkling water (about 2 oz) to add effervescence. Stir once gently with a bar spoon to combine without flattening the bubbles.

Taste and adjust: if you prefer sweeter, add up to 0.25 oz more simple syrup; if brighter, squeeze an extra few drops of lime.

Garnish & Serve

Express the oils of the grapefruit twist over the drink by holding the twist skin-side down and pinching it above the glass; then drop it into the drink, or perch a grapefruit wheel on the rim.
