Prepare the Tofu

Press the tofu for 15 minutes to remove excess moisture. Cut into 1-inch thick slices.

Bread the Tofu

Coat each tofu slice in flour, dip in plant-based milk, then dredge in panko breadcrumbs, ensuring an even coating.

Fry the Tofu

Heat olive oil in a skillet over medium heat. Fry the breaded tofu slices until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.

Marinara Sauce

Make the Marinara Sauce

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add crushed tomatoes, oregano, salt, and sugar. Simmer for 15-20 minutes, then stir in fresh basil.

Trotolli and Vegetables

Cook the Trotolli

Cook the trotolli pasta according to package instructions. Drain and set aside.

Combine Ingredients

In a large bowl, mix cooked trotolli with chopped sundried tomatoes and basil pesto. Toss to combine.

Assemble the Dish

In a baking dish, layer the trotolli mixture, roasted red peppers, and fried tofu slices. Pour marinara sauce over the top and sprinkle with vegan cheddar and parmesan cheese.

Preheat the oven to 375°F (190°C) and bake for 20-25 minutes until the cheese is melted and bubbly.

Serve hot with a side of sautéed house vegetables.
