Preparation and Baking
Make the Sauce
Sprinkle the flour over the sautéed vegetables and stir to coat. Gradually add the chicken broth and heavy cream, stirring constantly until the mixture thickens, about 5-7 minutes.
Combine Ingredients
Add the shredded chicken, peas, thyme, salt, and black pepper to the pot. Stir until well combined and heated through.
Prepare the Pie Crust
Preheat the oven to 425°F (220°C). Roll out pie crust and place in a deep-dish pie pan. Pour the chicken filling into the crust.
Top and Bake
Cover with another pie crust, seal the edges, and cut slits for steam to escape. Bake in the preheated oven for 30-35 minutes until the crust is golden brown.
Cool and Serve
Allow the pie to cool for about 10 minutes before slicing and serving.
