Prepare the Mămăligă

Cooking the Polenta

In a large pot, bring the water and salt to a boil. Gradually whisk in the cornmeal. Reduce heat to low and cook, stirring constantly, for about 15-20 minutes until thickened and smooth. Remove from heat and let it sit for a few minutes.

Cook the Stewed Pork/Chicken

Preparing the Meat

In a large skillet or pot, heat a bit of oil over medium heat. Add the chopped onion and sauté until translucent. Add the minced garlic, carrot, and bell pepper, cooking for another 5 minutes.

Simmering the Meat

Add the pork or chicken to the skillet and brown on all sides. Stir in the tomato paste, water or broth, bay leaf, salt, and pepper. Bring to a simmer, cover, and cook for 30-40 minutes until the meat is tender.

Plate the Dish

Spoon the mămăligă onto plates, top with the stewed meat, and garnish with sour cream, crumbled feta cheese, and garlic sauce as desired.
