Preheat and prepare

Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat. If you have a wire rack that fits, place it on the sheet for extra airflow.

Wash and cut

Scrub 2 medium sweet potatoes thoroughly. Peel if you prefer (peels can be left on for extra texture). Cut each potato in half lengthwise, then slice each half into 1/4- to 1/2-inch thick sticks, aiming for uniform thickness so fries cook evenly. Pat the cut fries very dry with a clean kitchen towel or paper towels.

Coat with cornstarch

Place the dried fries in a large bowl. Sprinkle 1 teaspoon cornstarch and 1/2 teaspoon baking powder (optional) over the fries. Toss or shake the bowl until fries are evenly coated. The cornstarch helps create a crisper exterior.

Season and oil

In a small bowl, whisk together 2 tablespoons olive oil, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, 1/2 teaspoon ground cumin, 1 teaspoon salt, and 1/2 teaspoon black pepper. Pour the oil-spice mixture over the coated fries and toss gently with your hands or tongs until every fry has a thin, even coating.

Arrange and space

Spread the fries in a single layer on the prepared baking sheet (or on the wire rack). Leave space between fries; overcrowding will steam them and prevent crisping. Use two baking sheets if necessary.

Bake and flip

Bake in the preheated oven for 10 minutes. Remove from oven and use a spatula to flip the fries or shake the pan to rotate them. Return to oven and bake another 8–12 minutes, watching closely during the last 5 minutes. Total bake time should be about 18–22 minutes depending on thickness; fries should be golden at the edges and tender inside.

Broil for extra crisp (optional)

If you want crispier edges, switch the oven to broil for 1–2 minutes at the end — watch constantly to avoid burning.

Finish and garnish

Remove fries from oven, immediately season with a light pinch of extra salt if needed, and sprinkle chopped fresh parsley. Serve hot with lemon wedges on the side for a bright finish.

While the fries bake, whisk together 1/4 cup mayonnaise, 1 teaspoon sriracha, 1/2 teaspoon honey, 1/2 teaspoon lime juice, and 1/8 teaspoon salt in a small bowl until smooth. Adjust heat or sweetness to taste. Chill briefly if desired.
