Toast oats (optional)
In a medium heavy-bottomed saucepan over medium heat, add the steel cut oats and toast, stirring frequently, until they smell nutty and begin to turn golden at the edges, 2–3 minutes. This step enhances flavor but can be skipped.
Cook oats
Once simmering, reduce heat to low so the oats maintain a low simmer. Cook uncovered, stirring occasionally to prevent sticking, until oats are tender and the texture is creamy, 20–30 minutes. For firmer oats cook closer to 20 minutes; for creamier oats cook toward 30 minutes. If the oats absorb too much liquid, add up to 1/2 cup extra water or milk during cooking.
Finish with butter
When oats reach desired texture, remove saucepan from heat and stir in the unsalted butter until melted and incorporated. Taste and adjust salt if needed.
Toppings & Assembly
Prepare toppings while oats finish cooking: slice the banana and rinse/inspect the berries. If using strawberries, hull and slice them; leave smaller berries whole.
Portion the oatmeal into bowls (recipe yields about 2 generous servings). Spoon about 1 tablespoon molasses over each bowl (divide remaining molasses as desired). Arrange banana slices and fresh berries on top.
If using, sprinkle chopped nuts over the oatmeal and drizzle a little maple syrup for extra sweetness. Serve immediately while warm.
