Method
Prep Vegetables

Wash and cut
Rinse all vegetables and aromatics under cold water. Trim ends of green beans. Slice cucumbers into spears about 3–4 inches long. Halve or quarter radishes and baby carrots if large. Break cauliflower into bite-sized florets. Peel pearl onions (blanch 30 seconds in boiling water, then shock in ice water to loosen skins if needed). Pat everything dry with a clean towel.

Distribute vegetables among 2–3 wide-mouth pint jars or one larger 1-quart jar so pieces fit snugly but not crushed. Add 2–3 dill sprigs, 2 smashed garlic cloves, and 2–3 lemon slices to each jar, tucking aromatics between vegetables.
Make Brine

Combine water, white vinegar, kosher salt, and sugar in a medium saucepan. Add pickling spice, bay leaves, and crushed red pepper flakes. Bring mixture to a simmer over medium heat, stirring so salt and sugar dissolve completely. Once simmering, remove from heat and let cool 5 minutes (hot brine speeds infusion but cooling slightly protects delicate vegetables).

Optional: For a clearer brine, tie pickling spice and bay leaves in a small cheesecloth sachet or use a fine mesh strainer when pouring.
Pack & Pour

Pour the hot brine over vegetables in the jars, leaving about 1/2 inch headspace. Press vegetables gently with a spoon or muddler so they are submerged under the brine. Add any remaining dill, garlic, and lemon slices on top. If needed, weigh vegetables down with a small clean glass or fermentation weight to keep everything submerged.

Wipe rims clean and screw on lids finger-tight. Let jars cool at room temperature until they reach room temperature (about 30–45 minutes).
Quick Pickle & Chill

For quick pickles: place cooled jars in the refrigerator. Vegetables will be pleasantly pickled after 24 hours, best flavor after 48–72 hours. Keep refrigerated; use within 3–4 weeks for best texture and flavor.

If you prefer a slightly softer, more fermented texture, let jars sit at cool room temperature (60–70°F / 15–21°C) for 2–3 days, then transfer to the refrigerator. Note: follow safe canning/fermentation practices if leaving at room temperature longer.
Serve

Arrange a selection of the pickled vegetables on a platter for a Pickle Plate. Drizzle a little olive oil over cauliflower or green beans if desired, sprinkle mustard seeds and scatter additional fresh dill. Offer optional crumbled feta or goat cheese on the side and small forks or toothpicks for guests to serve themselves.
