Prepare Wings
Trim and dry
If wings are whole, separate into drumettes and flats by cutting through the joint; discard tips or reserve for stock. Pat wings very dry with paper towels — dryness is important for crisp skin.
Place wings in a large bowl. Sprinkle kosher salt, freshly ground black pepper, and baking powder over the wings. Toss thoroughly so each wing is evenly coated. Let rest 15 minutes at room temperature or refrigerate uncovered for up to 1 hour to dry further (if refrigerating, allow an extra 10–15 minutes at room temperature before cooking).
Cook Wings
Oven method (recommended for 8 wings)
Preheat oven to 425°F (220°C). Arrange wings in a single layer on a wire rack set over a rimmed baking sheet (line sheet with foil for easier cleanup). Bake for 20 minutes, then flip wings and bake another 15–20 minutes until skin is deep golden and crisp and internal temperature reaches 165°F (74°C). Total time about 35–40 minutes.
Alternative: Air-fryer
Preheat air-fryer to 400°F (200°C). Place wings in a single layer (cook in two batches if needed). Cook 18–22 minutes, shaking or flipping halfway, until skin is crisp and internal temperature is 165°F (74°C).
Alternative: Frying
Heat 1 to 1.5 inches of neutral oil in a heavy skillet to 350°F (175°C). Fry wings in batches 8–10 minutes until golden and crisp. Drain on paper towels. (If frying, reduce or omit baking powder.)
Make Buffalo Sauce
While wings finish cooking, melt unsalted butter in a small saucepan over low heat or in a microwave-safe bowl (20–30 seconds). Whisk in hot sauce, brown sugar, garlic powder, smoked paprika, lemon juice, and salt until smooth and slightly emulsified. Keep warm on lowest heat; do not boil. Taste and adjust heat or salt to preference.
Toss and Serve
When wings are done, transfer them to a large mixing bowl. Pour the warm buffalo sauce over the wings and toss gently but thoroughly so each wing is coated. Taste and add additional hot sauce or salt if desired.
Arrange wings on a serving platter with celery and carrot sticks and a bowl of ranch or blue cheese dressing for dipping. Serve immediately.
