Make honey syrup
Combine 1 tablespoon honey with 1 tablespoon hot water in a small bowl or jar; stir or shake until fully dissolved. This yields approximately 0.5 oz of honey syrup. Cool briefly before using.
Prepare peach garnish
Cut a thin slice from a ripe peach. If you prefer, lightly torch the surface of the peach slice for 3–5 seconds to add a caramelized aroma (use caution). Set aside.
Cocktail
Add the rye whiskey, peach liqueur, fresh lemon juice, honey syrup, smoked water (or a very small amount of liquid smoke diluted in water), and bitters into a cocktail shaker.
Fill the shaker with ice (about 1 cup) and shake vigorously for 12–18 seconds until well chilled and slightly diluted.
Double-strain the mixture into an old-fashioned glass over one large ice cube (or into a chilled coupe if you prefer no ice). Use a fine mesh strainer if you used fresh peach bits or torching produced small particles.
