Preheat and prepare
Preheat oven to 425°F (220°C). If using an air fryer, preheat to 400°F (200°C). Line a rimmed baking sheet with parchment or lightly oil it, or prepare air fryer basket by brushing with oil.
Toss the frozen tater tots with 2 tablespoons neutral oil in a large bowl so they are evenly coated. Spread in a single layer on the prepared baking sheet, leaving slight space between tots for even crisping.
Bake until deep golden and crisp, 20–25 minutes in the oven, turning once halfway through. If air frying, cook 12–16 minutes, shaking basket or turning halfway, until crisp and golden. Remove from oven/air fryer and immediately sprinkle with 1 teaspoon kosher salt; toss gently to distribute.
Salted Maple Glaze
While tots are baking, make the glaze. In a small saucepan over low heat, combine 1 tablespoon pure maple syrup and 1 tablespoon unsalted butter. Warm gently until butter is melted and mixture is just beginning to shimmer, about 1–2 minutes. Do not boil.
Remove from heat and whisk in 1 teaspoon apple cider vinegar and 1/2 teaspoon finely grated lemon zest. Season with 1/2 teaspoon coarse sea salt and 1/4 teaspoon freshly ground black pepper. Taste and adjust: add a pinch more salt if you prefer a stronger salted contrast, or a few drops more vinegar for brightness.
If glaze cools and thickens before use, warm very briefly (5–10 seconds) in the microwave or over low heat so it’s pourable but not hot.
Finish & Serve
Place the hot, salted tater tots in a large bowl or on a serving platter. Drizzle the salted maple glaze evenly over the tots — start with about half the glaze and add more to taste so the tots are shiny but not soggy.
Serve immediately with the sour cream or Greek yogurt dip (mix sour cream with 1/2 teaspoon hot sauce if using) on the side for dipping. Enjoy while hot and crispy.
