Prepare Bread & Spread

Toast and butter

Lightly brush each slice of bread with olive oil on one side. Heat a skillet over medium heat and toast the oiled side until golden, about 2–3 minutes. Flip and lightly toast the second side 1–2 minutes. Remove and let cool slightly. Spread 1/2 tablespoon softened butter on the inside face of each slice while still warm so it melts in.

Make mayo-mustard

In a small bowl, stir together the mayonnaise (1 tablespoon per slice pair) and Dijon mustard. Spread about 1 tablespoon of the mayo-mustard onto the other face of each slice of bread (opposite the buttered face). This provides balance and keeps vegetables from sogging the bread.

Prepare Proteins & Cheese

If using cold-smoked or deli turkey and ham, arrange slices on a plate and fold gently to create texture. If you prefer warm, briefly heat the meat in the skillet used for toasting bread — 30–60 seconds per side until warmed through. Place 2 ounces (about half) of turkey onto two of the bread slices and 2 ounces of ham onto the other two slices. Top each protein layer with a 1-ounce slice of Gruyère or cheddar.

If you want melted cheese, set an oven broiler to low or place sandwiches under a preheated 350°F (175°C) oven for 3–5 minutes until cheese softens and just melts. Watch closely to avoid over-browning.

Assemble Vegetables & Fresh Elements

Season tomato and avocado slices lightly: toss tomato and avocado with lemon juice, 1/4 teaspoon salt and a pinch of black pepper to brighten flavor and slow browning. Arrange 1/4 cup sliced tomato and 1/4 cup sliced cucumber on top of the cheese of each sandwich base.

Add thin red onion rings sparingly (about 1 tablespoon per sandwich) and a small handful (about 1/4 cup) of mixed baby greens or butter lettuce. Add 2 basil leaves per sandwich for an aromatic lift.

Top with 3–4 cornichon or dill pickle slices per sandwich for a crunchy, tangy contrast.

Final Assembly & Seasoning

Place the remaining bread slices, mayo side down, on top of each prepared open-faced base to close the sandwich, buttered side out. Press lightly to compress the layers evenly.

Cut each sandwich in half on the diagonal. Sprinkle everything bagel seasoning or sesame seeds over the cut faces if using. Drizzle hot honey or a few drops of Sriracha over the exposed vegetables if you want a sweet or spicy finish.

Serve immediately with extra pickles on the side. If transporting, wrap sandwiches in parchment and refrigerate up to 4 hours to keep ingredients fresh.
