Prepare the brine and brine chicken
In a large bowl or container, whisk together 3 cups buttermilk, 2 tablespoons Kosher salt, 1 teaspoon granulated sugar and 2 tablespoons hot sauce (if using). Submerge the chicken thighs in the brine, cover, and refrigerate for at least 4 hours or up to overnight. This tenderizes the meat and helps the breading adhere.
When ready to fry, remove chicken from the fridge and let rest at room temperature for 20–30 minutes. While it rests, set up your breading station.
Breading
Mix dry breading
In a wide shallow bowl or rimmed baking sheet, whisk together 2 cups all-purpose flour, 1/2 cup cornstarch, 1 tablespoon paprika, 1 teaspoon smoked paprika, 2 teaspoons garlic powder, 1 teaspoon onion powder, 1 teaspoon cayenne, 1 teaspoon black pepper and 1.5 teaspoons Kosher salt. Stir until uniform.
Remove each chicken piece from the buttermilk, allow excess to drip off, then dredge thoroughly in the flour mixture, pressing the flour into the skin and crevices to create a thick coating. Shake off excess and set on a wire rack. For an extra-crispy double-coat: dip briefly back into the remaining buttermilk and dredge again in the flour mixture.
Frying
Heat oil
Pour about 1.5 cups neutral frying oil into a deep skillet, Dutch oven or cast-iron pan to create a 1 to 1.5-inch deep layer. Heat gently over medium-high heat until the oil reaches 350°F (175°C). If you don’t have a thermometer, test by dropping a pinch of flour into the oil; it should sizzle immediately but not burn.
Fry chicken
Fry the chicken in batches, skin side down first, being careful not to overcrowd the pan. Fry at 325–350°F (160–175°C) so the coating crisps and the interior cooks without burning the crust. Cook thighs for about 6–8 minutes per side (12–16 minutes total), turning once, until the internal temperature reaches 165°F (74°C) and the crust is deep golden-brown. Adjust heat as needed to maintain oil temperature.
Transfer fried chicken to a wire rack set over a sheet pan to drain and rest for 5 minutes while you make the sauce. Do not stack pieces—keep them separated so the crust stays crisp.
Nashville-style Hot Butter Sauce (Music City Hot Sauce)
Make the sauce
In a small saucepan over low heat, melt 8 tablespoons unsalted butter. Stir in 2 teaspoons light brown sugar, 2 teaspoons cayenne pepper, 1 tablespoon Hungarian or sweet paprika, 1/2 teaspoon chipotle powder (if using), 1/2 teaspoon garlic powder, 1 tablespoon apple cider vinegar, 1 tablespoon hot honey, and 1/2 teaspoon Kosher salt. Whisk until sugar dissolves and spices bloom, then keep the sauce warm on the lowest heat. Taste and adjust heat/sweetness: add more cayenne for heat or more honey to balance.
If you prefer a thinner sauce for a lighter coating, whisk in 1–2 teaspoons neutral oil or a splash of water; for a glossy finish, keep at low heat until slightly emulsified.
To Serve
Place each sauced thigh on a slice of white bread and top with a few dill pickle chips (this is classic Nashville presentation and helps cut the heat). Optionally garnish with chopped chives or green onions and a spoonful of pickled red onion.
Serve immediately while hot and crispy. Provide extra hot honey or sauce on the side for diners who want more heat or sweetness.
