Preheat and prepare tots
Preheat oven to 425°F (220°C). Arrange frozen tater tots in a single layer on a rimmed baking sheet lined with parchment paper or a lightly oiled sheet, leaving small gaps between tots so they crisp evenly.
Bake until crisp
Bake according to package directions for a very crispy exterior, typically 20–25 minutes, turning once halfway through. Baking time can vary by brand—aim for golden brown and crunchy.
Make maple glaze
While tots bake, combine unsalted butter, 3 tablespoons maple syrup, and 1 tablespoon brown sugar in a small saucepan over medium-low heat. Stir until butter and sugar melt and mixture is glossy, about 2–3 minutes. Remove from heat and whisk in smoked paprika, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper. Taste and adjust maple or salt as desired.
Toss tots in glaze
When tots are hot from the oven (work in batches if needed), place them in a large mixing bowl. Pour the warm maple glaze over the tots and gently toss with a spatula or silicone spoon until they are evenly coated. If you prefer a lighter coating, reserve a little glaze for drizzling. Return coated tots to the baking sheet in a single layer.
Finish baking
Return glazed tots to the oven for 4–6 more minutes to set the glaze and allow edges to caramelize slightly. Watch carefully so the sugars don't burn.
Finish & Garnish
Cook and crumble bacon: If you haven't already, cook 4 slices of bacon until crisp (pan-fry or bake at 400°F / 200°C for 12–18 minutes), then drain on paper towels and roughly crumble. Reserve.
Assemble and garnish: Remove tots from the oven and transfer to a serving platter. Sprinkle crumbled bacon over the tots, scatter 1 ounce crumbled goat cheese or feta, and sprinkle 2 tablespoons sliced fresh chives. If you like a spicy-sweet kick, drizzle up to 1 teaspoon hot honey or Sriracha over the top, or serve on the side.
Serve immediately: Serve hot so the glaze is sticky and the tots remain crisp. Offer the optional dipping sauce on the side.
Dipping Sauce (optional)
Whisk sauce: In a small bowl, whisk together 1 tablespoon mayonnaise, 1 teaspoon maple syrup, 1 teaspoon Dijon mustard, 1 teaspoon fresh lemon juice, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until smooth. Taste and adjust sweetness or acidity as preferred.
Chill or serve: Chill briefly if you want a cold contrast, or serve immediately alongside the warm Maple Tater Tots.
