Prepare aromatics

Heat a large heavy-bottomed pot over medium heat. Add the olive oil and butter and let the butter melt. Add the finely diced onion, grated carrot (if using), and diced celery. Cook, stirring occasionally, until the vegetables are softened and the onion is translucent, about 6–8 minutes. Add the minced garlic and cook for 30–45 seconds until fragrant, taking care not to burn it.

Develop tomato flavor

Push the vegetables to the side and add the tomato paste to the pot. Cook the paste for 2–3 minutes, stirring frequently, until it darkens slightly — this caramelizes the paste and reduces metallic acidity.

Deglaze

If using, pour in the red wine to deglaze the pot, scraping up any browned bits from the bottom. Let the wine simmer 2–3 minutes to reduce slightly and burn off alcohol.

Add tomatoes and stock

Add the crushed tomatoes and chicken or vegetable stock to the pot. Stir to combine with the aromatics and tomato paste.

Season and simmer

Stir in the brown sugar, dried oregano, dried basil, crushed red pepper flakes, bay leaves, salt, and black pepper. Bring the sauce to a gentle simmer over medium-low heat. Reduce the heat so the sauce maintains a low gentle simmer (small bubbles) and cook, uncovered or partially covered, for 45–60 minutes, stirring occasionally, until the sauce has reduced and flavors have melded. Skim any foam or excess oil from the surface if desired.

Finish and adjust

Remove the bay leaves. Taste and adjust seasoning: add more salt, pepper, or sugar if needed. Stir in the lemon juice or red wine vinegar to brighten the sauce and the chopped fresh basil if using. If you prefer a smoother sauce, use an immersion blender to purée to desired consistency, or transfer portions to a blender (be careful with hot liquids) and blend, then return to pot.

Hold or serve

Keep the sauce warm on the lowest heat setting if serving immediately, or cool and refrigerate in airtight containers for up to 4 days (or freeze up to 3 months). Reheat gently, adding a splash of stock or water if it has thickened too much.
