Fool’s Gold Sauce

Prepare aromatics

In a small bowl combine garlic powder, onion powder, smoked paprika, chipotle powder, kosher salt and black pepper. Stir briefly to evenly blend the spices.

Warm pan

Place a small saucepan over medium-low heat. Add the vegetable oil and butter and warm until butter is melted and foamy but not browned (about 30–45 seconds).

Bloom spices

Add the blended dry spices to the warm butter/oil and cook, stirring constantly, for 20–30 seconds. This releases the smoked paprika and chipotle aroma — do not let them burn.

Combine base ingredients

Reduce heat to low and add the yellow mustard, honey, brown sugar, apple cider vinegar and Worcestershire sauce to the pan. Whisk continuously until the sugar is dissolved and the mixture is smooth, about 1–2 minutes.

Adjust consistency & flavor

Add 2 tablespoons of water and continue to simmer gently for another 1–2 minutes, whisking. Taste and adjust: add an extra 1–2 teaspoons honey if you want sweeter, or another 1 teaspoon apple cider vinegar if you want brighter acidity. If too thick, add water 1 teaspoon at a time to reach a pourable but clingy sauce.

Finish

Remove the pan from heat. Stir in the lemon juice (if using) and check seasoning. If using, stir in the finely chopped herbs for freshness. Let the sauce cool slightly; it will thicken as it cools. Use warm or at room temperature.

Storage

Transfer to a sterilized jar or airtight container. Keeps refrigerated for up to 2 weeks. Rewarm gently before using if chilled.

Optional finishing & serving

To serve, drizzle Fool’s Gold over grilled chicken, pulled pork, roasted vegetables, or use as a sandwich spread or dipping sauce. Finish with a light sprinkle of smoked sea salt and extra chopped herbs for presentation.
