If you prefer a hot sandwich, preheat a skillet or sandwich press over medium heat while you assemble.

Mix sauces
In a small bowl combine 1 tablespoon mayonnaise with 1 teaspoon Dijon mustard and 1 teaspoon olive oil. Stir until smooth. Taste and add balsamic glaze (about 1 teaspoon) if you want a slightly sweet-acid note.
Spread the mayonnaise-mustard mixture evenly onto the interior sides of both bread slices or onto the center of the warmed wrap.

Assemble protein layer
Arrange the 3 ounces of thinly sliced roasted turkey (or ham) in an even layer on the bottom slice of bread (or on the center of the wrap). Top with one slice of cheese. If making a breakfast sandwich, cook 1 egg in a small nonstick skillet with a little oil over medium heat to desired doneness (about 2–3 minutes for sunny-side, 3–4 minutes per side for over-easy) and place the egg on top of the cheese.
If you intend to melt the cheese, place the assembled sandwich (open-faced) in the preheated skillet or press and toast for 1–2 minutes until the cheese softens, then close and toast another 1–2 minutes to finish.

Add vegetables
Top the protein with 1/2 cup mixed salad greens, 2 slices of tomato, 3 rings of red onion, and 3 pickle slices. Distribute vegetables evenly so the sandwich is balanced and not overstuffed.
Season the tomato and greens lightly with 1/4 teaspoon salt and 1/8 teaspoon freshly ground black pepper to enhance flavor.

Close, toast, and finish
Place the top slice of bread on the sandwich or fold the wrap tightly around the filling. If using bread and you want it toasted, heat a skillet over medium heat (or use a sandwich press). Add the buttered side down and toast 2–3 minutes per side until golden and crisp, pressing gently. For a wrap, place seam-side down in the skillet and toast 1–2 minutes per side until grill marks appear and filling is warmed through.
Remove sandwich from heat, let rest 1 minute, then cut in half diagonally. Serve immediately with optional chips, a side salad, and a cup of coffee.
