Method
Classic Tavern Burger (for 4)
Form Patties
Place the ground beef in a large bowl. Sprinkle with kosher salt, black pepper, and Worcestershire sauce. Gently combine with your hands — do not overwork. Divide into 4 equal portions and gently form into 3/4-inch thick patties, slightly wider than the buns (they’ll shrink as they cook). Make a shallow indentation in the center of each patty with your thumb to prevent doming.
Cook Patties
Add vegetable oil to the hot pan or brush grill grates with oil. Place patties on the hot surface and cook undisturbed 3–4 minutes for medium-rare to medium (internal ~125–135°F / 52–57°C), or 5–6 minutes for medium-well, then flip once. Immediately after flipping, place a slice of cheddar on each patty and cook another 2–3 minutes until cheese melts and desired doneness is reached. Remove patties and tent loosely with foil for 3 minutes to rest.

Cook Bacon
Preheat oven to 400°F (200°C) or use a skillet. Arrange bacon on a rimmed baking sheet and bake 12–18 minutes until crisp. Drain on paper towels and keep warm. Alternatively, cook bacon in a skillet over medium heat until crisp, then drain.
Prepare & Cook Chicken
Slice each chicken breast horizontally to create two thinner cutlets if breasts are large, or pound to 1/2-inch thickness. In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Brush or toss the chicken with the seasoned oil. Heat a grill pan or skillet over medium-high heat and cook the chicken 4–5 minutes per side, until internal temperature reaches 165°F (74°C) and juices run clear. Remove and let rest 3–4 minutes, then slice.
Make Lemon Mayo
In a small bowl combine mayonnaise and lemon juice. Taste and adjust with a pinch of salt or additional lemon if desired.
Toast Rolls & Assemble
Slice ciabatta or rolls and toast cut sides lightly with butter or on the grill. Spread a tablespoon of lemon mayo on each roll bottom. Layer lettuce, sliced grilled chicken, two slices of bacon (crispy), and two tomato slices. Add the top roll and press gently. Serve with pickles and coleslaw if desired.
Arrange pickles, coleslaw, and additional condiments (ketchup, mustard, relish) in small bowls for guests to help themselves. Keep fries or chips warm and serve alongside burgers, hot dogs, and sandwiches.
