Method
Prepare Beans
Soak the beans
Rinse 1 lb dried beans under cold water and remove any debris. Place beans in a large bowl and cover with cold water by at least 2 inches (about 8 cups). Soak overnight (8–12 hours) or use a quick-soak: bring beans and 8 cups water to a boil for 2 minutes, remove from heat, cover and let sit 1 hour. Drain and rinse after soaking.
Par-cook the beans
Transfer soaked, drained beans to a large pot. Add 4 cups fresh water (reserve remaining water separately) and 2 cups low-sodium stock. Bring to a gentle simmer and cook uncovered until beans are just tender but not falling apart, about 30–40 minutes depending on bean age. Skim foam as needed. Drain, reserving 1–2 cups of cooking liquid and set beans aside.
Prepare Sauce & Aromatics
Cook aromatics and bacon (if using)
In a heavy ovenproof Dutch oven or large skillet over medium heat, add 2 tbsp unsalted butter or bacon drippings. If using chopped smoked bacon, add it now and cook until fat renders and edges are golden, about 6–8 minutes. Remove crisped bacon with a slotted spoon and set aside, leaving fat in the pan. Add the finely chopped onion and cook until soft and translucent, about 6 minutes. Add minced garlic and cook 30–45 seconds until fragrant.
Build the sauce
Stir in 1 cup ketchup, 3 tbsp tomato paste, 1 cup packed brown sugar, 3 tbsp molasses, 2 tbsp Worcestershire sauce, 2 tbsp apple cider vinegar, 2 tsp yellow mustard, 1 tsp smoked paprika, 1 tsp black pepper, and 1 tsp salt. Add minced chipotle in adobo if using. Bring sauce to a gentle simmer and cook 3–4 minutes to meld flavors and cook out tomato paste. If the sauce seems too thick, whisk in 1/4–1/2 cup reserved bean cooking liquid or water to reach a slightly saucy consistency.
If you prefer a slightly thicker finish, sprinkle 1 tsp flour over the sauce and whisk in to eliminate lumps; simmer 1–2 minutes.
Combine & Bake (Smoked Finish)
Combine beans and sauce
Add the par-cooked beans and reserved cooking liquid (about 1–2 cups) to the sauce in the Dutch oven. Stir gently to coat beans evenly. Taste and adjust seasoning — add more salt, pepper, brown sugar or vinegar as needed. Fold in reserved cooked bacon pieces if used.
Option A — Oven bake (no smoker)
Cover the Dutch oven and bake in the preheated 325°F oven for 1 hour, then uncover and bake an additional 30–45 minutes until sauce is thickened and beans are creamy. Stir once halfway through and baste with sauce. If sauce reduces too much, add up to 1/2 cup extra water or reserved bean liquid.
Option B — Smoker finish (recommended for stronger smoke)
If using a smoker, transfer the covered Dutch oven (or an ovenproof pan) to a smoker preheated to 225–250°F. Smoke for 1–2 hours, then uncover and smoke/bake another 30–45 minutes until sauce is concentrated and beans are tender. This will impart a pronounced smoky flavor. If you don’t have a Dutch oven safe for the smoker, transfer finished beans to an aluminum pan covered tightly with foil before smoking.
After baking or smoking, let the beans rest 10–15 minutes; sauce will thicken as they cool.
Finish & Serve
Taste and adjust final seasoning (a splash more vinegar brightens the dish; a pinch more brown sugar smooths acidity). Stir in chopped fresh parsley just before serving.
Serve warm as a side for barbecue, burgers or on toast. Store leftovers in an airtight container in the refrigerator for up to 4 days; reheat gently on the stovetop, adding a splash of water if needed.
