Prepare okra
Rinse the okra under cold water and pat dry thoroughly with a kitchen towel or paper towels. Trim the stem ends only (about 1/8–1/4 inch) without cutting into the pod to avoid slime. Cut okra into 1/2‑inch thick rounds. If you prefer whole baby okra, leave them whole and pierce a few times.
Set up wet mix
In a medium bowl whisk the buttermilk and the egg until combined. Stir in 1/2 teaspoon of the salt and a pinch of black pepper. This helps the coating adhere and seasons the okra from the inside.
Make dry mix
In a shallow dish or pie plate combine the cornmeal, flour, remaining 1.5 teaspoons salt, 1 teaspoon black pepper, smoked paprika, cayenne (if using), and garlic powder. Whisk together to ensure even seasoning and break up any lumps.
Dredge the okra
Working in batches (to avoid crowding), place a handful of cut okra into the buttermilk-egg mixture, toss to coat, then transfer to the dry mixture. Toss and press lightly so each piece is well coated. Shake off excess and set coated okra on a wire rack for 5 minutes to let the crust adhere. Repeat until all okra is coated.
Frying
Heat the oil
Pour the oil into a deep skillet or Dutch oven so it reaches about 1 to 1.5 inches up the side (approximately 2.5–3 cups for a 10‑inch skillet). Heat over medium-high heat to 350°F (175°C). If you don't have a thermometer, test by dropping one small piece of coated okra — it should sizzle immediately and float.
Fry in batches
Carefully add a single layer of coated okra to the hot oil, avoiding overcrowding. Fry for 2.5–4 minutes, turning once or twice with a slotted spoon or spider so pieces brown evenly. Cook until golden brown and crisp. Maintain oil temperature between 325–350°F — reduce heat slightly if it browns too quickly.
Drain
Use a slotted spoon to transfer fried okra to a paper towel‑lined baking sheet or wire rack set over a sheet pan to drain. Sprinkle lightly with finishing salt while still hot. Repeat frying remaining okra in batches.
Finishing & Serving
If desired, re-crisp leftover okra in a 375°F (190°C) oven on a wire rack for 5–8 minutes.
