Trim and pat dry
Rinse each catfish fillet under cold water and pat thoroughly dry with paper towels. Trim any ragged edges so fillets are relatively uniform in thickness (about 1/2 to 1 inch thick).
Marinate
Place fillets in a shallow dish or zip-top bag. Combine buttermilk, hot sauce, kosher salt, and black pepper. Pour the buttermilk mixture over the fillets so they are fully submerged. Cover or seal and refrigerate for at least 30 minutes and up to 4 hours. The buttermilk tenderizes and seasons the fish.

Mix dry ingredients
While the fish marinates, whisk together cornmeal, all-purpose flour, optional corn flour (masa), salt, sweet paprika, garlic powder, onion powder, cayenne, and black pepper in a wide shallow bowl or rimmed baking sheet. Ensure the mixture is evenly blended.
Set up dredging station
Set the dry coating nearby next to the marinated fish and a clean tray or plate for finished coated fillets. If you want an extra-crisp double-coat, reserve about 1/4 cup of the dry mix to re-dredge after the first coat.
Frying
Heat the oil
Pour 2 to 3 cups vegetable oil into a heavy skillet (cast-iron preferred) or dutch oven to a depth of about 1 to 1.5 inches. Heat over medium-high until the oil reaches 350°F (175°C) on a frying thermometer. If you don't have a thermometer, test by dropping a pinch of the dry mix—if it sizzles and bubbles steadily, it's ready.
Dredge the fillets
Remove one fillet at a time from the buttermilk, allowing excess to drip back into the dish. Press both sides of the fillet firmly into the dry coating, ensuring an even, thorough layer. Shake off any large excess. For an extra-crisp crust, dip coated fillet briefly back into the buttermilk and then again into the dry mix (double coat). Place coated fillets on a rack or sheet while oil heats and you finish coating remaining fillets.
Fry in batches
Carefully place fillets in the hot oil, skinless-side down first if applicable, without overcrowding—fry 2 fillets at a time depending on pan size. Maintain oil temperature around 325–350°F (160–175°C). Fry for 3–5 minutes per side (about 6–10 minutes total) until the crust is golden-brown and the fish registers 145°F (63°C) and flakes easily. Thicker fillets may take longer. Turn once using tongs or a slotted spatula.
Drain and rest
Transfer fried fillets to a wire rack set over a baking sheet or to paper towels to drain for 2–3 minutes. Resting on a rack prevents sogginess and keeps the crust crisp. If you fried in batches, keep the finished fillets in a warm oven at 200°F (95°C) while you fry the rest.
