Prepare corn (if using fresh)

If using fresh ears, husk and rinse 4–5 medium ears. Stand each ear vertically in a deep bowl and use a sharp knife to slice kernels off the cob. After removing the kernels, use the back of the knife to scrape the milky white pulp from the cob into the bowl — this adds extra sweet flavor and liquid (about 1/4 cup). If using frozen corn, thaw and drain, reserving any liquid. Set corn and reserved liquid aside.

Sauté aromatics

Place a 10-12-inch skillet over medium heat and add 3 tablespoons unsalted butter. When butter is melted and foaming, add 1/2 cup finely minced yellow onion and 1 clove minced garlic (if using). Sauté, stirring frequently, until the onion is translucent and soft, about 4–5 minutes. Do not let the onion brown.

Make roux

Sprinkle 2 tablespoons all-purpose flour over the softened onions and stir to coat. Cook the flour-onion mixture for 1–2 minutes, stirring constantly, to remove the raw flour taste. The mixture should become slightly fragrant and pale golden but not darken significantly.

Add liquids and simmer

Slowly whisk in 1 cup whole milk and 1/4 cup reserved corn cooking liquid or broth, breaking up any lumps. Add 1/2 cup heavy cream and continue to whisk until the mixture is smooth. Bring the mixture to a gentle simmer over medium-low heat, stirring frequently, until it thickens slightly, about 3–5 minutes.

Add corn and finish cooking

Stir in the 4 cups corn kernels, 1 teaspoon granulated sugar, 1 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper. Reduce heat to low and simmer gently, stirring occasionally, for 6–8 minutes so the corn warms through and releases some juices, and the sauce becomes creamy. Taste and adjust seasoning (add up to 1/2 teaspoon more salt or a pinch of sugar if needed).

Optional texture variation

For a silkier creamed corn, remove about 3/4 cup of the hot corn mixture and puree it briefly in a blender or with an immersion blender, then return it to the pan and stir to combine. This step produces a creamier base while keeping whole kernels for texture.

Finish with butter and herbs

Off the heat, stir in an additional 1 tablespoon unsalted butter for shine and richness (optional). Taste and adjust seasoning. Sprinkle 1 teaspoon fresh thyme leaves or chopped chives over the top for garnish.

Serve

Transfer the creamed corn to a serving dish and serve hot. It pairs well with roasted meats, grilled vegetables, or as part of a holiday spread. Leftovers can be refrigerated in an airtight container for up to 3 days; reheat gently on the stovetop, adding a splash of milk if needed to loosen the sauce.
