Method
Prepare Bread & Spread
Split and toast
Split the ciabatta loaf lengthwise. Lightly butter the cut sides with softened butter. Heat a skillet over medium heat and toast the cut sides, buttered-side down, 2–3 minutes until golden and slightly crisp. Alternatively, use a hot grill or panini press.
Make sandwich spread
In a small bowl, stir together mayonnaise, Dijon mustard, olive oil, red wine vinegar, and pepper relish until smooth and evenly combined. Taste and adjust salt/pepper as needed.
Prepare Meats & Cheese
On the bottom half of the toasted ciabatta, layer the provolone slices to cover the bread surface. If you prefer melted cheese, place the open sandwich under a broiler for 30–60 seconds until the cheese softens and just begins to bubble — watch carefully.
Assemble Meats
Layer the meats, building height but keeping balance: first arrange the ham evenly over the cheese, then add the smoked turkey, followed by the roast beef, and finish with the capicola/salami. Aim to distribute so each bite has all four meats.
If you like the sandwich warm, place the assembled bottom half (meat side up) back into the warm skillet, cover with a lid for 30–45 seconds to meld flavors and gently heat through.
Add Vegetables & Finish
On the top half of the toasted ciabatta, spread half of the prepared sandwich spread evenly. Top the spread with romaine leaves, tomato slices, red onion rings, and pickle slices. Season the tomato with a pinch of salt and freshly ground black pepper to taste.
Optional: add pickled jalapeños or banana peppers across the vegetables for a tangy heat.
Place the top half of the bread (spread side down) onto the stacked meats and vegetables. Press gently to compact the sandwich slightly.
Using a sharp knife, cut the sandwich in half (or into quarters for easier handling). Serve immediately while the meats are warm and the bread is crisp.
