Trim
Start with a whole packer brisket (about 5 lb). Pat the brisket dry with paper towels. Trim excessive hard fat from the surface and round edges, leaving a thin layer (about 1/4 inch) of fat on top to protect the meat and render during the cook. Remove any silver skin that prevents seasoning penetration.

Bring to room temperature
Let the trimmed brisket sit, loosely covered, at room temperature for 45–60 minutes so it cooks more evenly. Meanwhile prepare the rub.

Make and apply rub
In a small bowl combine 3 tbsp kosher salt, 2 tbsp coarse black pepper, 1 tbsp paprika, 2 tsp garlic powder, 2 tsp onion powder, 1 tbsp brown sugar, and 1 tsp ground cumin. Mix thoroughly. Rub the mixture evenly over the entire surface of the brisket, pressing it into the meat. Be sure to season the edges and the underside lightly. Let it rest 15–30 minutes so the rub adheres.

Preheat smoker or oven
If using a smoker: preheat to 225°F (107°C) using hardwood like oak, hickory, or oak-pecan blend; maintain steady smoke. If using an oven: preheat to 250°F (121°C) and place a rack in a low roasting pan; you can use a pan with a small amount of water to create a humid environment. Position the brisket fat-side up so rendered fat drips over the meat.

Smoke / low-roast
Place the brisket on the smoker rack (or oven rack above the pan). Cook at low temperature until the internal temperature reaches about 155–165°F (68–74°C). For a 5 lb whole brisket expect roughly 4–6 hours depending on equipment and consistency; check after 3 hours and then hourly. Begin spritzing once the bark forms (see spritz section).

Wrap (Texas crutch) — optional
When the brisket reaches about 155–165°F and the bark has formed, tightly wrap it in heavy-duty aluminum foil or pink butcher paper. Before sealing, add 2 tbsp of butter and 1/4 cup of the spritz liquid into the packet for added moisture. Reseal and return to the smoker/oven.

Finish to tenderness
Continue cooking until the brisket reaches an internal temperature of 200–205°F (93–96°C) and feels probe-tender—a thermometer probe should slide into the thickest part with little resistance. This can take another 1.5–3 hours after wrapping depending on size.

Rest
Remove the brisket from heat. If wrapped, keep it wrapped. Place it in a cooler or an insulated container and let it rest for at least 60 minutes (up to 2 hours). Resting lets the juices redistribute and the meat relax for clean slicing.

Slice for the table
Unwrap the brisket and reserve any accumulated juices. Identify the grain: the flat and point have different grain directions. Slice the flat across the grain into 1/8–1/4 inch thick slices for presentation. For the point, trim into chunks or slice across the grain; chopped or pulled point is excellent for communal serving. Arrange slices on a large board or platter, layering the point and flat attractively. Spoon some reserved juices or a few tablespoons of melted butter over the slices to keep moist.

Combine 1 cup apple cider vinegar, 1 cup water, 1 cup apple juice, 1 tbsp Worcestershire sauce and 1 tsp kosher salt in a spray bottle or bowl. Shake or mix to dissolve salt. Starting one hour into the cook when the surface begins to form a crust, spritz the brisket lightly every 30–45 minutes until wrapping. If you wrapped the brisket, you don’t need to spritz after wrapping. The spritz keeps the surface moist and adds subtle flavor.
Optional finishing & serving

Before serving, melt 4 tbsp unsalted butter and stir in 2 tbsp chopped fresh parsley. Drizzle a little of this butter mixture over the sliced brisket for sheen and richness. Offer barbecue sauce and pickles or pickled onions on the side. Serve family-style on a large wooden board or platter so everyone can carve and pass portions.
