Wash and scrub the potatoes. Using a knife or fry cutter, cut into 1/4 to 3/8-inch (6–9 mm) sticks. Place cut fries in a large bowl of cold water and soak for 30 minutes to remove excess starch (this yields crisper fries).

If you prefer a tender interior, bring a pot of salted water to a boil, add the drained fries and blanch for 3 minutes. Drain and immediately transfer to an ice bath to stop cooking, then drain thoroughly and pat completely dry with clean kitchen towels or paper towels.

For deep-frying: heat vegetable oil in a heavy pot or fryer to 325°F (160°C). Working in batches, fry the fries 3–4 minutes until pale and slightly tender (do not brown). Transfer to a wire rack or paper towels. For oven method: preheat oven to 225°F (110°C). Toss dried fries with 1 tbs olive oil and spread on a rimmed baking sheet; bake 20 minutes to dry them further.

For deep-frying: heat oil to 375°F (190°C). Fry batches 2–3 minutes until golden and crisp. Drain on a wire rack or paper towels and immediately season with 1 tsp salt and 1/2 tsp black pepper. For oven method: increase oven to 425°F (220°C). Toss pre-dried fries with remaining 0 tbs olive oil (or drizzle 1 tbs more if needed), spread in a single layer, and roast 20–28 minutes, turning halfway, until deep golden and crisp. Season immediately with salt and pepper.

Place the hot fries in a large bowl. Pour the warm garlic-herb oil over the fries and toss gently to coat evenly so the residual heat releases aroma. Add chopped parsley, lemon zest, and red pepper flakes; toss again to distribute.

Sprinkle the grated Parmesan over the fries and toss lightly so the cheese clings. Taste and adjust salt/pepper. If using, drizzle the balsamic reduction sparingly over the fries for a sweet-acid contrast. Serve immediately.
