Prepare lettuce
Tear or chop the washed and thoroughly dried romaine into bite-sized pieces. Place in a large salad bowl and chill briefly while you finish other components.
Season the toasted breadcrumbs with kosher salt and freshly ground black pepper. Transfer to a plate to cool completely; they will crisp further as they cool.
Caesar Dressing
Combine base ingredients
In a medium bowl, combine mayonnaise, Greek yogurt, lemon juice, Dijon mustard, Worcestershire sauce, mashed anchovy fillets (or anchovy paste), and the minced garlic clove.
Finish & adjust
Whisk in the grated Parmesan until smooth. Taste and season with freshly ground black pepper. If the dressing is too thick, whisk in up to 2 teaspoons of water, 1 teaspoon at a time, until it reaches a pourable but creamy consistency.
Chill (optional)
Chill the dressing for at least 10 minutes if time allows to let flavors meld; whisk again before using.
