Omelet Base (per omelet)
Beat eggs
Crack 3 large eggs into a medium bowl. Add 1 tablespoon whole milk, 1 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper. Whisk vigorously until blended and slightly frothy (about 20–30 seconds).
Preheat pan
Place a nonstick 8–10 inch skillet over medium heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan. Heat until butter foams but does not brown (about 30–45 seconds).
Cook eggs
Pour the beaten eggs into the hot skillet. Let eggs sit undisturbed for 10–15 seconds until the edges begin to set. Using a heatproof spatula, gently push the set edges toward the center while tilting the pan to let uncooked egg flow to the edges. Repeat for 30–45 seconds until the egg surface is mostly set but still slightly glossy on top.
Add fillings
Scatter 1/4 cup shredded cheddar (or chosen cheese) and up to about 1/2 cup combined chosen fillings (for example 1/4 cup diced ham + 1/4 cup sautéed mushrooms or 1/4 cup spinach + 1/4 cup diced bell pepper) evenly over one half of the omelet. If using raw vegetables that need softening (mushrooms, bell pepper), pre-sauté them in a separate pan with 1 teaspoon oil for 2–3 minutes until softened before adding.
Fold and finish
Using the spatula, gently lift the opposite egg edge and fold it over the fillings to create a semicircle. Let the omelet cook for another 15–30 seconds to melt the cheese and finish cooking. For a slightly firmer interior, cover the skillet for 30 seconds. Slide the finished omelet to a plate.
Garnish
Sprinkle 1 teaspoon chopped fresh parsley and a grind of black pepper over the omelet. Serve immediately with chosen side (bacon or sausage and home fries or mixed greens).

Cook bacon
For bacon: Place 3 bacon strips in a cold skillet in a single layer. Cook over medium heat, turning occasionally, until crisp and browned (about 8–12 minutes). Transfer to paper towels to drain. For faster service, bacon may be baked at 400°F (205°C) on a sheet pan for 12–18 minutes until crisp.
Cook sausage links
For sausage links: Add 2 links to a skillet over medium heat with 1 tablespoon water; cover and cook for 4–5 minutes, then uncover and continue turning until browned and cooked through (internal temperature 160°F/71°C), about 6–8 minutes total. Drain excess fat before serving.

Home fries (if chosen)
If making home fries fresh: heat 1 tablespoon olive oil in a skillet over medium-high heat. Add 1 cup diced, par-cooked potatoes in a single layer. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Let the potatoes cook undisturbed for 3–4 minutes to brown, then stir and continue to cook until tender and crisp, 6–8 minutes total. Adjust seasoning to taste.

Portioning and customization: This recipe describes one three-egg omelet. Multiply ingredient quantities and pre-cook fillings (ham, sautéed vegetables) to serve multiple orders quickly.
