Chocolate Cake Layers

Prepare

Preheat oven to 350°F (175°C). Grease three 8-inch round cake pans and line bottoms with parchment; grease parchment and dust lightly with flour, tapping out excess.

Dry ingredients

In a large bowl, whisk together 2.5 cups flour, 2.25 cups granulated sugar, 0.75 cup unsweetened cocoa powder, 1.5 tsp baking powder, 1.5 tsp baking soda, and 1 tsp kosher salt until evenly combined.

Wet ingredients

In a separate bowl or large measuring cup, whisk 3 eggs, 1 cup buttermilk, 1/2 cup whole milk, 1/2 cup vegetable oil, and 2 tsp vanilla extract until smooth.

Combine

Add the wet mixture to the dry ingredients and mix on low speed (or stir by hand) until just combined and no large streaks remain. Scrape the bowl sides.

Add coffee

Carefully stir in 1 cup very hot brewed coffee (or hot water). Batter will be thin — this produces a moist crumb. Divide batter evenly between the three prepared pans (about 2 cups batter per pan).

Bake

Bake for 22–28 minutes, rotating pans halfway through, until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

Cool

Let cakes cool in pans on a wire rack for 10 minutes. Run a knife around edges, invert onto racks, remove parchment, then cool completely (about 1 hour) before assembling. For best results, wrap layers in plastic and chill for 1–2 hours or overnight to firm.

Chocolate Ganache Filling

Warm cream

Place 12 oz chopped semisweet chocolate in a heatproof bowl. Heat 1 cup heavy cream until just simmering (do not boil).

Make ganache

Pour the hot cream over the chopped chocolate. Let sit undisturbed 2 minutes, then stir gently from center until smooth. Stir in 2 tbsp unsalted butter and 1 tsp light corn syrup (if using) until glossy. Let cool until spreadable but still pourable (about 20–30 minutes at room temperature, or faster in refrigerator — stir occasionally).

Whipped Cream & Assembly

Chill equipment

Chill the bowl and whisk/beaters in the refrigerator for 10–15 minutes if possible. Cold equipment helps the cream whip faster.

Make whipped cream

Pour 2 cups cold heavy cream into the chilled bowl. Add 1/4 cup powdered sugar and 1 tsp vanilla. Beat on medium-high speed until soft peaks form, then stop when medium peaks form. Do not overwhip — you want light, pipeable whipped cream for decoration and layers.

Level layers

If cake tops domed, level each cake layer with a serrated knife or cake leveler so they are even. Place the first layer on a cake board or serving plate.

First ganache layer

Spoon or pour approximately one-third of the ganache onto the first cake layer and spread an even layer with an offset spatula (about 1/3 of prepared ganache).

Add whipped cream and ice cream

Pipe or spread a thin layer (about 1/3 of whipped cream) over the ganache to create a soft barrier. For a luxurious contrast, place 2 scoops of vanilla ice cream in the center of the layer (keep cake on a chilled surface or work quickly so ice cream holds shape). If assembling fully frozen ice cream layers is preferred, use semi-frozen scoops and assemble in a chilled environment.

Repeat

Top with the second cake layer, press gently to level, spread another third of ganache, then another third of whipped cream and 2 more scoops of vanilla ice cream. Add the final cake layer on top.

Crumb coat

Apply a thin crumb coat of whipped cream over the entire cake (use about half of remaining whipped cream). Chill for 20–30 minutes to set the crumb coat.

Final coat

Finish frosting the cake with the remaining whipped cream, smoothing sides and top with an offset spatula or bench scraper. Lightly dust top with 1 tsp cocoa powder for contrast.

Garnish

Reserve a few dollops of whipped cream to pipe rosettes on top. Arrange remaining vanilla ice cream scoops (if serving immediately) or serve slices with extra scoops on the side. Garnish with fresh mint leaves and sprinkle 0.25 tsp sea salt flakes sparingly over the ganache areas to enhance flavor.

Optional Chocolate Drip & Garnish

Make drip

If using a chocolate drip, heat 1/4 cup heavy cream until simmering and pour over 4 oz chopped dark chocolate in a small bowl. Let sit 2 minutes, then stir until smooth. Let cool briefly until slightly thickened. Transfer to a squeeze bottle or spoon.

Apply drip

With the cake chilled (final coat set), apply drips around the edge, letting chocolate run down the sides. Use the remaining chocolate to pool a glossy center or to accent as desired.

Finish decoration

Sprinkle toasted chopped nuts or chocolate shavings (about 1/2 cup) over the top and piped rosettes. Add additional mint sprigs for color. If serving immediately, place extra scoops of vanilla ice cream alongside each plated slice.
