Method
Dip
Prepare artichokes and crab
Drain canned artichoke hearts well, pressing out excess liquid, then roughly chop into 1/2-inch pieces. Pick through the jumbo lump crab to remove any shells and large cartilage; gently flake crab into bite-sized pieces and set aside. Reserve 2 oz crab for garnish.
Make base mixture
In a large mixing bowl, beat the softened cream cheese until smooth. Add sour cream, mayonnaise, lemon juice, Worcestershire sauce, harissa paste, and minced garlic. Mix until fully incorporated and smooth. Season with 1/2 tsp salt and 1/2 tsp black pepper.
Add cheeses and herbs
Fold in 1 cup grated asiago and 1 cup grated parmesan, reserving 1/4 cup extra for topping if using. Add chopped parsley and gently mix to combine.
Fold in crab and artichokes
Gently fold the chopped artichoke hearts and the majority of the crab meat into the cheese mixture, taking care not to break the lumps excessively. Taste and adjust seasoning — add up to another 1/2 tsp salt or more lemon if desired. If you want more heat, add another 1/2 tsp harissa.
Transfer and top
Spoon the mixture into a shallow ovenproof baking dish (about 9-inch or similar). Smooth the top and sprinkle the reserved 1/4 cup grated cheese evenly over the surface.
Bake
Preheat oven to 375°F (190°C). Bake the dip for 18–22 minutes until bubbly and lightly golden on top. If you prefer a deeper brown, place under the broiler for 1–2 minutes while watching carefully to avoid burning.
Garnish
Crostini
Slice and oil baguette
Preheat oven to 400°F (200°C) or keep at broil if still warm from baking dip. Slice the baguette on the bias into 1/3-inch slices. In a small bowl, whisk 2 tbsp olive oil with 1/4 tsp salt and 1/4 tsp pepper, then brush both sides of each bread slice lightly with the oil.
Bake crostini
Arrange slices on a baking sheet in a single layer. Bake for 6–9 minutes, flipping once halfway, until golden and crisp. For extra crispness, broil 30–60 seconds per side, watching closely.
