Fit Turkey Wrap

Bring the bottle from cellar/stored temperature to the recommended serving range. Place the bottle in the refrigerator for about 20–30 minutes if it is at room temperature, or let it sit at room temperature for 30–60 minutes if it is colder than 10°C (50°F). Aim for a serving temperature of 60–65°F (15–18°C). Use a wine thermometer to check if desired.

Chill to serving temperature

Remove the foil capsule around the neck with a foil cutter or knife. Position the corkscrew in the center of the cork and insert fully, then gently pull the cork straight out. Wipe the bottle mouth with a clean cloth or napkin to remove any dust or cork debris.

Open the bottle

If the wine is young and tannic, or if you want to let aromas open up, pour the wine slowly into a decanter. For a 2021 Napa Cabernet like this, decant for 30–60 minutes to soften tannins and elevate fruit and oak aromas. If you have an aerator, you may use it for a quicker effect (a few minutes of aeration).

Decanting (optional)

Pour about 4–6 ounces (120–180 ml) per glass. Fill Bordeaux-style glasses to the widest point to allow aromas to collect. Hold the bottle near the base and pour gently; optionally use a napkin to catch any drips.

Pouring

Swirl the wine in the glass to release aromas, take a moment to observe color and viscosity, then inhale to identify notes of black cherry, cassis, cocoa, baking spices and vanilla from oak aging. Take a small sip, let it coat your palate, then evaluate acidity, tannin structure, body and finish. Allow the wine to open in the glass over 10–20 minutes for additional complexity.

Tasting & Enjoying

If you do not finish the bottle, re-cork it (use original cork or a wine stopper) and store standing in the refrigerator. Red wines will keep 2–5 days depending on exposure to air; use a vacuum pump if you want to extend freshness. Let the bottle come back to serving temperature before drinking remaining wine.
