1. Prepare the Lemongrass Aioli

In a small bowl, mix together the finely chopped lemongrass, mayonnaise, lime juice, soy sauce, and sesame oil. Stir until well combined and set aside.

2. Prepare the Ahi Tuna

In a separate bowl, combine the diced ahi tuna, diced avocado, and sliced green onions. Gently toss with salt and a drizzle of sesame oil.

3. Assemble the Poke
