Veggie Patty
Prepare flax egg
Whisk the ground flaxseed with the warm water in a small bowl and let sit for 5 minutes until thickened.
Mash beans
In a large bowl, roughly mash the drained black beans with a fork or potato masher, leaving some whole beans for texture.
Combine base ingredients
Add the cooked brown rice, cooked quinoa, rolled oats, grated carrot, chopped onion, minced garlic, and chopped herbs to the mashed beans. Stir to combine.
Season and bind
Add the ground cumin, smoked paprika, kosher salt, black pepper, and soy sauce (or tamari). Pour in the flax 'egg' and mix thoroughly until the mixture holds together when pressed. If too wet, add up to 1-2 tablespoons extra oats; if too dry, add 1 tablespoon water at a time.
Form patties
Divide the mixture into 4 equal portions (about 3/4 cup each). Use damp hands to form each portion into a 3/4-inch thick patty, compacting firmly so they hold shape.
Chill (optional but recommended)
Place patties on a tray and chill in the refrigerator for 20–30 minutes to help them firm up, which reduces splitting when cooking.
Pan-fry patties
Heat 1 tablespoon olive oil in a large nonstick or cast-iron skillet over medium heat. Add two patties and cook 4–5 minutes per side, pressing gently with a spatula, until a golden brown crust forms and patties are heated through. Add remaining 1 tablespoon olive oil and cook the last two patties the same way. If patties brown too fast, reduce heat to medium-low and cover for 1–2 minutes to heat through.
Melt cheese (optional)
If using Monterey Jack or Sheese®, place a slice on each patty during the last minute of cooking and cover the pan briefly to help it melt/soften. For a vegan option, cover longer if needed to soften Sheese®.
Assembly & Toppings
Toast buns: Lightly toast burger buns in a toaster or in a dry skillet for about 1 minute per side until just golden.
Spread condiments: Spread ketchup and optional mayonnaise (or vegan mayo) on the cut sides of each bun to taste.
Assemble burgers: Place a lettuce leaf on the bottom bun, add a cooked veggie patty with melted cheese, top with tomato slices, red onion, and 2 pickle slices. Crown with the top bun.
Serve: Serve immediately with extra ketchup on the side and any desired sides (fries, salad).
