Prepare glass

Chill glass

Fill a highball or Collins glass with ice and set aside to chill for 1–2 minutes. Discard the chilling ice just before building the drink, or leave it in if you prefer a colder, slightly more diluted cocktail.

Optional rim: If using sea salt, rub a grapefruit wedge around the rim of the glass, then dip the rim in a shallow plate of sea salt to lightly coat. Set glass aside.

Build the cocktail

Add fresh ice to the prepared glass so it's about three-quarters full.

Pour 2 oz Tanqueray Ten gin over the ice.

Add 1/2 oz fresh pink grapefruit juice to brighten the drink and add a bit of tartness. This complements the soda and brings out the gin's citrus botanicals.

Top with 4 oz Schweppes pink grapefruit soda. Pour slowly so the soda maintains some effervescence and layers slightly over the gin.

If using, add 2 dashes of grapefruit bitters to deepen the grapefruit aroma and balance sweetness.

Finish & garnish

Gently stir once or twice with a bar spoon to combine ingredients without flattening the soda.

Garnish with a fresh pink grapefruit wedge or wheel on the rim. If using a twist, express the oils over the drink by holding the twist over the surface and pinching it, then drop it in.

Serve immediately with a straw or without, and enjoy.
