1. Choose your base and mixer

Select one spirit: Tanqueray (gin), Chase (gin), or Captain Morgan (Original or Spiced rum). For mixers, pair gin with Schweppes Indian Tonic, gin can also take Schweppes Mediterranean Tonic; rum pairs well with Schweppes Ginger Ale (for Original) or Schweppes Cola (for Spiced). Use the chosen mixer chilled.

2. Prepare glass

Fill a highball or Collins glass with about 6 large ice cubes, leaving space at the top for the spirit and mixer.

3. Pour spirit

Measure and pour 50 ml of your chosen spirit over the ice.

4. Add mixer

Slowly top with 150 ml chilled Schweppes mixer of your choice. Pour gently over the back of a spoon or down the side of the glass to preserve carbonation.

5. Finish and balance

Squeeze one fresh lime wedge into the drink and drop the wedge into the glass. For spiced rum + cola, add 2 dashes of Angostura bitters if desired. For the Captain Morgan + ginger ale variant, slap and add a mint sprig for aroma.

6. Stir

Give the drink one or two gentle short stirs with a bar spoon to integrate spirit and mixer without flattening carbonation.

7. Garnish & serve

Garnish with a lime wheel or wedge on the rim and serve immediately with a straw or stirrer.

Optional adjustments

To make a slightly stronger drink, increase spirit to 60 ml and reduce mixer to 130 ml. For a lighter option, use 40 ml spirit and 170 ml mixer.

If serving multiple drinks, multiply ingredient quantities by number of servings and prepare in batch by chilling spirit and mixer ahead of time; build individually over ice to preserve carbonation.
