Juice and sweeten

Strain or pour 1 cup fresh orange juice and 1/2 cup fresh grapefruit juice into a measuring jug. Add 1 tablespoon fresh lemon juice. Stir in 1 tablespoon honey syrup until fully dissolved. Taste and adjust sweetness — add up to another 1/2 tablespoon honey syrup if you prefer it sweeter.

Chill base briefly (optional): If juices are warm, place the jug in the refrigerator for 10 minutes or add a few ice cubes and stir, then discard those cubes so you don't overly dilute the drink in the next step.

Sparkle & Color

Combine with sparkling water

Pour 3/4 cup chilled sparkling water into the citrus mixture and gently stir once or twice to combine, preserving most of the carbonation.

Create the sunrise effect

Fill a tall glass with 1 cup of ice and lightly bruise 4 of the mint leaves between your palms to release aroma; nestle them against the glass wall. Slowly pour the mixed citrus and sparkling water into the prepared glass. Carefully spoon 1 teaspoon grenadine down the inside of the glass near the ice so it sinks and slowly rises, creating a layered 'sunrise' gradient.

Garnish and serve: Top the drink with the remaining mint leaves and an orange slice on the rim. If desired, gently stir once before drinking to blend the flavors. Serve immediately while sparkling.
