Prepare glass
Fill a large wine glass or rocks glass generously with ice so the glass is well chilled and the drink will remain cold without diluting quickly.
Measure and add aperitif
Pour 1.5 oz of Sartí (or Aperol if substituting) over the ice. The bright, bittersweet base sets the flavor profile.
Add Prosecco
Slowly add 3 oz of chilled Prosecco. Pour gently over the back of a spoon or down the side of the glass to preserve bubbles and produce a layered pour.
Top with soda
Add 1 oz chilled soda water to lighten the cocktail and lengthen it into a spritz. Adjust the soda amount to taste if you prefer a drier or lighter spritz.
Stir gently
Give the mixture one or two very gentle swirls with a bar spoon to integrate the ingredients without flattening the Prosecco.
Garnish and serve
Garnish with an orange wheel on the rim or floated in the glass and, if desired, a mint sprig tucked beside it. Serve immediately while cold and effervescent.
