Chill Glass

Place a martini/coupe glass in the freezer for at least 5–10 minutes to chill while you prepare the drink.

Prep Garnish

Cut one passion fruit in half. Reserve one half for garnish and scoop out pulp from the other half for use in the cocktail. If rimming the glass, wet the rim lightly with a little lime juice and dip into sugar; set aside.

Mixing & Serving

Combine Ingredients

Fill a cocktail shaker about two-thirds full with ice. Add vanilla vodka (3 tbs), passion fruit liqueur (1.5 tbs), fresh passion fruit pulp (from half a fruit), fresh lime juice (0.5 tbs), and simple syrup (0.5 tbs) into the shaker.

Shake

Secure the shaker and shake vigorously for 12–15 seconds until the outside of the shaker feels cold and the mixture is well combined and slightly frothy from the passion fruit.

Strain

Remove the chilled glass from the freezer. Double-strain the cocktail into the glass using a Hawthorne strainer and a fine mesh strainer (to remove seeds and pulp) for a smoother texture. If you prefer texture, single strain only.

Garnish & Serve with Prosecco

Float the reserved passion fruit half (pulp-side up) in the cocktail or place it on the rim. Serve immediately with a small chilled shot or glass of dry prosecco (about 3 tbs) on the side for sipping or pouring into the cocktail according to preference.

Optional Adjustments

Taste and adjust: add up to 0.5 tbs more simple syrup if you prefer sweeter, or a splash more lime if you prefer more acidity. If using non-vanilla vodka, consider adding 0.25 tbs vanilla syrup or a drop of vanilla extract to preserve the vanilla character.
