Combine and simmer

In a small saucepan combine 3 oz granulated sugar and 3 oz water. Split a vanilla bean and scrape the seeds into the pan (or add 1 tsp vanilla extract). Heat gently over medium-low heat, stirring until the sugar fully dissolves. Do not boil vigorously; a gentle simmer for 2–3 minutes is enough.

Remove from heat and let the syrup cool to room temperature with the vanilla pod steeping for at least 15 minutes to develop flavor. If you used a vanilla bean, strain out solids before storing. Store in a sealed container in the refrigerator for up to 2 weeks.

Prepare the passion fruit

Halve a ripe passion fruit. Scoop out the pulp (seeds and juice) of one half into a small bowl; reserve the other half for garnish.

Build and shake

Fill a cocktail shaker with about 1 cup of ice. Add 2 oz vanilla vodka, 1 oz passion fruit liqueur, 0.5 oz fresh lime juice, 0.5 oz vanilla simple syrup, and the scoop of passion fruit pulp. Seal the shaker and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and slightly frosted.

Double strain and serve

Double-strain the mixture (using a cocktail strainer and a fine mesh strainer) into a chilled coupe or martini glass to remove ice shards and most seeds. This yields a smooth, slightly frothy surface with passion fruit bits if desired.

Garnish & Serve

Float the reserved half passion fruit (cut side up) on the surface of the cocktail or place it on the rim. Pour 2 oz chilled prosecco or champagne into a small shot glass and serve it on the side. Optionally scrape a tiny amount of vanilla pod over the top for aroma.

Serve immediately: the traditional way is to sip the prosecco alongside the martini, using it as a palate refresher between sips, or pour a small amount into the cocktail to taste.
