Chill
Ensure both the sparkling wine and the orange juice are well chilled (ideally 40–50°F / 4–10°C). Place bottles or containers in the refrigerator for at least 2 hours before serving or in an ice bucket for 20–30 minutes.
Measure Juice
Pour 1/4 cup (60 ml) of freshly squeezed orange juice into each glass. For a 1:1 ratio classic Mimosa, pour 1/2 cup (120 ml) orange juice and 1/2 cup (120 ml) sparkling per serving; this recipe yields two 1:1 servings.
Add Sparkling Wine
Tilt the glass slightly and slowly pour 1/4 cup (60 ml) sparkling wine into each glass over the back of a spoon or down the side to preserve bubbles. For this recipe amount (1 cup each total), divide equally between two glasses.
Adjust Ratio
If you prefer a drier, bubblier drink, increase sparkling wine to juice ratio to about 2:1 (sparkling:juice). For a sweeter, fuller orange flavor, increase juice up to a 1:1 ratio.
