Mix and Portion

Place the ground beef in a bowl. Add kosher salt, black pepper, Worcestershire sauce, and garlic powder. Gently mix with your hands or a spatula until just combined — avoid overworking to keep patties tender. Divide the mixture into two equal portions (about 8 ounces each).

Form Patties

Shape each portion into a patty about 3/4 to 1 inch thick and slightly wider than the buns (they will shrink). Create a shallow dimple in the center of each patty with your thumb — this helps them cook flat and prevents doming.

Oil and Rest

Brush both sides of the patties lightly with the olive oil. Let them rest at room temperature while you prepare the grill (10–15 minutes).

Prep Toppings

While the patties rest, slice the tomato and red onion if not already sliced. Wash and dry lettuce leaves. Arrange pickles, tomato slices, onion rings, and cheese slices on a tray for assembly.

Toast Buns

Preheat a skillet or the grill to medium heat. Spread softened butter on the cut sides of each bun. Place buns, cut-side down, on the hot skillet or grill for 1–2 minutes until golden and lightly crisp. Remove and keep warm.

Sauce

Portion ketchup, mustard, and mayonnaise into small bowls or measure directly onto buns during assembly.

Preheat Grill

Preheat a grill or grill pan to medium-high (about 400–450°F / 200–230°C). Clean grates and then oil them lightly with neutral oil using a folded paper towel held with tongs.

Grill Patties

Place the patties on the hot grill. Cook undisturbed for 3–4 minutes to develop a sear. Flip once using a spatula and cook another 3 minutes for medium (adjust time ±1 minute for doneness preference). During the last 1 minute of cooking, place a slice of cheddar on each patty and close the lid or cover with a bowl to melt the cheese.

Rest Patties

Transfer finished patties to a plate and let rest 3–5 minutes — this helps juices redistribute.

Assemble Burgers

Spread mayonnaise on the bottom bun, then add lettuce leaf, the cheeseburger patty, tomato slices, onion rings, and pickles. Spread ketchup and mustard on the top bun and place it on top. Serve immediately.
